๐ŸCrispy Pineapple Veggie Fried Rice๐Ÿ Not reinventing the wheel here, but just sharing a quick and easy fried rice you can make! Plus, if you have leftover rice and veggies in the fridge already, this is how you can make a meal without anything going to waste! I like this combo of pineapple, red bell pepper, and broccoli - you can also add tofu if you have some! Colorful and flavorful! ๐ŸŒˆ

INGREDIENTS

โœ… Leftover rice, brown or white

โœ… Pineapple chunks, fresh or frozen

โœ… One sliced red bell pepper

โœ… One-head of broccoli florets

โœ… Chopped green onion โœ… Cooking oil - olive, coconut or sesame

โœ… Garlic, fresh or ground

โœ… Red pepper flakes

โœ… 1 TBS. Soy sauce

HOW TO MAKE

โœ… Heat a pan over medium-high heat

โœ… Add desired amount of oil to coat the bottom of the pan

โœ… Let it get nice and hot, but not smoking!

โœ… Add the pineapple chunks - let them sit and brown on the bottom then flip.

โœ… Add broccoli florets, and rice, season with garlic powder, red pepper flakes, soy sauce - make sure everything is spread out evenly so the bottom of the rice can brown and crisp, let it sit for a few minutes.

โœ… Flip the rice and add sliced peppers, green onion - again make sure everything is evenly spread out. Add more oil if you need to. Let rice sit and crisp a few more minutes. Rice should make a sizzling noise.

โœ… When veggies are slightly soft and the rice is nicely browned, get ready to serve!
