πŸ₯‘ CRISPY TOFU & AVOCADO SALAD πŸ₯‘

Yep, still obsessed with summer salads πŸ₯—over here! This one is delicious and plant protein packed so you can feel full and ditch the meats! Plus we're using nutrient-rich spinach for our greens giving us a good dose of iron, vitamin c, vitamin k, folic acid and calcium! This recipe includes crispy tofu, sweet potatoes and quinoa which you will want to make ahead of time. Then everything will just be ready for assembly!

You want to start with crisping your tofu - I buy extra firm, drain it and squeeze out the extra moisture, cut it into chunks, toss in some corn starch, salt & pepper and crisp in the air fryer or pan with some coconut oil. Then it's ready for your salad! You can also prep your sweet potato cubes ahead of time by boiling or roasting, then cutting them into cubes.

Ingredients for Salad

βœ… Fresh Spinach

βœ… Cooked quinoa

βœ… Cubed sweet potatoes (pre-cooked)

βœ… Crispy tofu

βœ… Avocado (sliced)

βœ… Everything but the bagel seasoning

Ingredients for Dressing

βœ… BBQ Sauce - 1 - 2 TBS.

βœ… Soy Sauce - 1 Tsp.

βœ… Sesame Oil - 1 Tsp.

βœ… Rice Wine Vinegar - 1/2 Tsp.

TO MAKE

βœ… Prep tofu, potatoes, quinoa ahead of time

βœ… Whisk dressing ingredients in a bowl

βœ… Layer spinach on the bottom of your plate

βœ… Add quinoa

βœ… Add sweet potatoes

βœ… Add Avocado

βœ… Add Crispy Tofu

βœ… Pour dressing over salad, sprinkle everything but the bagel seasoning
