🥗 VEGGIE BURGER SALAD🥗

We all know it's too hot to really cook anything - so I've been indulging in lots of different salads! This veggie burger salad has quickly become my favorite go-to lunch option. It's so easy to make and tastes so good! Topped with hummus, tomatoes, avocado and herbs, it’s big on flavor and packed with feel-good nutrients.

I love veggie burger patties, and actual veggie patties, not the ones that are trying to taste like meat. They are full of great plant protein which is just as satisfying as animal protein, plus they are made with a variety of different veggies - which yes, adds so much great flavor! I have been using the masala patties from Trader Joe's - they're not only a good mix of veggies, but also a nice use of spices! Yes, you need to cook the patty, which you can serve warm or refrigerate and serve cold later, but other than that - this recipe is just about assembly and makes for a refreshing and light meal!

🍅 INGREDIENTS

✅ Lettuce, or for more vitamins use spinach or mixed greens.

✅ Cooked veggie patty of your choice.

✅ Chilled roasted beets.

✅ Hummus

✅ Tomato

✅ Avocado

✅ Dairy-Free Feta (@violife_foods makes a good one)

✅ Chopped Herbs - I used basil and mint

✅ Salt & Pepper to season

✅ Olive Oil & Lemon Juice dressing

🥑 TO MAKE

✅ Layer a plate or bowl with lettuce on the bottom, add beets, season and dress.

✅ Place cooked veggie patty on top - spread on hummus.

✅ Top with tomatoes, avocado, chopped herbs and sprinkle with feta.

✅ Season to your liking!
